Zesty Rice & Bean Salad

Beans are loaded with all kinds of nutritional benefits. High in protein and soluble fiber, not only do beans help lower the risks of cancer and heart disease – beans also help diabetics maintain even insulin levels. Soluble fiber does an abundance of good things for your body so make sure you are incorporating at least 3 grams of soluble fiber into your daily fiber intake.

Yield: 4 cups

2 tbsp. olive oil

1 garlic clove, minced

1/2 tsp. ground red pepper

1/2 tsp. grated lime rind

1/4 cup fresh lime juice

dash salt

2 cups cooked brown rice

1 (15 oz. can) black beans, rinsed & drained

1 (15 oz. can) kidney beans, rinsed and drained

1/4 cup chopped green onion

1/4 cup chopped fresh mint

1/4 cup crumbled fat-free feta cheese

  1. whisk together first (6) ingredients in a large bowl; add rice & next (4) ingredients, tossing to coat. Sprinkle w/feta cheese. Cover & chill 1 hour, if desired.
