Apple Oat Bran Muffins

Yield: 18 muffins

cooking spray

2 large cooking apples, peeled, cored & coarsley chopped

2 cups whole wheat pastry flour

1 cup unbleached white flour

1 1/4 cups oat bran

2 1/2 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. nutmeg

1 (12 oz. can) apple juice conentrate, thawed

1 cup water

  1. Preheat oven to 325 degrees. Lightly coat muffin pan(s) with cooking spray, set aside.
  2. In a large mixing bowl, stir together pastry flour, white flour, oat bran, baking soda, cinnamon and nutmeg. Add thawed apple juice concentrate, chopped apples and enough water to make a light batter. Mix just enough to moisten all ingredients.
  3. Divide batter among muffin cups and bake at 325 degrees until lightly browned, 25-30 minutes. Remove muffins from pan and cool on wire rack(s).
