Baked Salmon with Orange Glaze

Yield: 2 servings


2 large salmon fillets (5 oz. each)

2 cups chopped spinach

1 cup sliced mushrooms

2 medium roma tomatoes, chopped


4 tbsp. Smucker’s Low Sugar Sweet Orange Marmalade

1/2 tsp. fresh ginger, minced

1/2 tsp. fresh garlic, minced

1 tsp. tahini

  1. To Prepare Salmon - preheat oven to 375 degrees. Place salmon fillets (skin side down) in a 13 x 9-inch baking dish coated with cooking spray. Mix remaining ingredients until well blended and spoon over salmon. Bake 20-25 minutes or until salmon flakes easily when tested with fork.
  2. To Prepare Glaze - in a microwave bowl, combine marmalade, ginger, garlic and tahini. Stir well with whisk or fork. Heat 3 minutes, stopping to stir every minute. Let cool. Top salmon fillets with orangeĀ glaze.
