Cajun Garlic Pork Roast

Yield: 8     (serving size: 3 oz.)

1 1/2 tbsp. minced fresh garlic

1 tbsp. dried oregano

2 tsp. black pepper

1 tsp. seasoned salt

1 tsp. chili powder

1 tsp. ground cumin

1/2 tsp. crushed red pepper

1 (2 lb.) boneless pork loin roast, trimmed

cooking spray

  1. Preheat oven to 350 degrees.
  2. Combine first (7) ingredients and rub over roast; place on broiler pan coated with cooking spray. Bake at 350 degrees for 1 1/2 hours or until thermometer registers 155 degrees. Let stand 10 minutes.
