Chicken Thighs with Thyme & Lemon

Yield: 8     (serving size: 2 chicken thighs)

2 1/2 tbsp. honey

1/2 tsp. grated lemon rind

1 1/2 cups fresh lemon juice (about 6 lemons)

1/4 cup chopped fresh thyme (1 tbsp. dried)

1 tbsp. olive oil

16 skinless, boneless chicken thighs (about 3 lbs.)

1/2 tsp. salt

1/4 tsp. black pepper

cooking spray

  1. Place first (5) ingredients in a large zip-top plastic bag. Add chicken; seal bag. Chill 2 hours, turning occasionally.
  2. Prepare grill or preheat broiler. Remove chicken from bag; discard marinade. Sprinkle chicken with salt and pepper. lace chicken on grill rack or broiler pan coated with cooking spray; cook 5 minutes on each side or until done.
