Cranberry Granola

Making your own granola is very easy and will save you both money and calories.

Yield: 5 servings

2 cups rolled oats

1/2 cup dried cranberries, snipped

1/2 cup honey (+ more if desired)

1/2 cup wheat germ

1/4 cup chopped almonds

1/4 cup chopped walnuts

2 tbsp. vegetable oil

3/4 tsp. vanilla extract

1/2 tsp. ground cinnamon

  1. Preheat oven to 300 degrees. In a large bowl, stir together oats, wheat germ, nuts and cranberries.
  2. In a medium saucepan over medium heat, stir toegether oil, honey, vanilla and cinnamon. Heat just until warm and well combined. Drizzle warm oil mixture over dry ingredients and stir to coat evenly. Spread mixture out in a thin layer on a cookie sheet lined with foil.
  3. Bake at 300 degrees for 30-40 minutes, stirring every 10 minutes to toast evenly. Allow to cool completely before serving or storing in an airtight container. Granola will become crunchy as it cools.
