Herb, Garlic & Mustard Crusted Fillet of Beef

Yield: 8     (serving size: 3 oz.)

1 (2 lb.) beef tenderloin, trimmed

cooking spray

3/4 tsp. salt

1/4 tsp. freshly ground black pepper

3 tbsp. Dijon mustard

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1 tbsp. fresh thyme, chopped

1 tbsp. fresh oregano, chopped

3 garlic cloves, minced

  1. Preheat oven to 400 degrees.
  2. Place beef on broiler pan coated with cooking spray. Sprinkle with salt & pepper. Spread mustard evenly over beef. Combine remaining ingredients; pat evenly over beef.
  3. Insert meat thermometer into thickest portion of beef. Bake at 400 degrees for 40 minutes or until thermometer registers 145 degrees (medium-rare) or desired degree of doneness.
  4. Transfer beef to cutting board. Cover loosely with foil and let stand 10 minutes before slicing.
