Lean Meat Loaf

Yield: 4 servings

1 tbsp. butter or margarine

1 cup onion, chopped

3 garlic cloves, minced

1 lb. extra-lean ground turkey breast

1/2 cup regular oats

1 large egg

3/4 cup salsa, divided

2 tsp. Worcestershire sauce

3/4 tsp. sea salt

1/2 tsp. freshly ground black pepper

  1. Preheat oven to 350 degrees.
  2. Melt butter in a small skillet over medium-high heat. Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to large bowl and let cool 5 minutes. Add turkey, oats, egg, 1/4 cup salsa, Worcestershire sauce, sea salt and pepper to onion mixture and mix well.
  3. Press into an 8 x 4-inch loaf pan coated with cooking spray. Spread remaining 1/2 cup salsa over top. Bake at 350 degrees for 50-55 minutes or until no longer pink in center and internal temperature reaches 165 degrees. Let stand 5 minutes before slicing.
