Maple-Glazed Salmon

Yield: 4 servings

2 tbsp. maple syrup

1 1/2 tsp. apple juice

1 1/2 tsp. fresh lemon juice

2 tsp. hoisin sauce

1 1/2 tsp. fresh ginger, peeled & grated

1 1/2 tsp. country-style Dijon mustard

1/4 tsp. five-spice powder

4 (6 oz.) salmon fillets (about 1-inch thick)

  1. Combine first (7) ingredients in a  large zip-top plastic bag. Add fish to bag; seal. Marinate in refrigerator 15 minutes.
  2. Preheat broiler.
  3. Remove fish from bag, reserving marinade. Place fish fillets, skin sides down, on broiler rack coated with cooking spray. Broil 12 minutes or until fish flakes easily when tested with fork, basting salmon with reserved marinade.
