Roasted Pork with Honey Grape Sauce

Yield: 4     (serving size: 3 oz. pork + 1/4 cup sauce)

2 tsp. olive oil, divided

1/3 cup shallots, chopped

1 tbsp. garlic, minced

2 cups red seedless grapes, coarsely chopped

2 tbsp. Tamari sauce or soy sauce

2 tbsp. honey

1 tsp. fresh ginger, peeled & grated

dash Chinese five spice powder

1 1/4 lbs. pork tenderloin, trimmed

1/2 tsp. salt

1/2 tsp. freshly ground black pepper

  1. Preheat oven to 45o degrees.
  2. Heat 1 tsp. oil in medium saucepan over medium-heat. Add shallots and garlic; saute 3 minutes or until tender. Add grapes and next (4) ingredients. Bring to boil; reduce heat and simmer 15 minutes. Cool 10 minutes. Place mixture in a blender; process until smooth.
  3. Heat 1 tsp. oil in a large cast iron skillet over medium-high heat. Sprinkle pork with salt and pepper. Add pork to pan; cook 5 minutes, browning on all sides. Insert meat thermometer into thickest portions of pork. Bake pork at 450 degrees for 12 minutes or until thermometer registers 155 degrees. Tent with foil; let stand 10 minutes before slicing. Serve with sauce.
