Stuffed French Toast

I know what Daniel is craving when he wakes up and says “I’m feeling like Elvis today.”

Yield: 4

2 large eggs

1/2 cup low-fat milk

1/2 cup peanut butter

8 slices whole grain bread

1-2 banana(s), sliced diagonally

1 tbsp. Smart Balance 50/50 Butter

1/4 cup pure maple syrup

  1. In a pie plate, beat eggs & milk with a fork. Spread peanut butter on all (8) slices of brad. Top (4) bread slices with banana slices and top with remaining bread slices to make (4) sandwiches. Dip in egg mixture to coat.
  2. Melt butter in a 12-inch nonstick skillet over medium heat. Add sandwiches and cook about 6 minutes, or until golden on both sides. Drizzle each sandwich with 1 tbsp. syrup and serve.
