Three-Pepper Pork Cutlets

Yield: 4     (serving size: 2 pork cutlets)

1 (1 lb.) ultra-lean pork tenderloin

2 tsp. Hungarian sweet paprika

1 tsp. dried thyme

1 tsp. olive oil

1/2 tsp. dried oregano

1/2 tsp. dried rosemary, crushed

1/2 tsp. salt

1/4 tsp. white pepper

1/4 tsp. freshly ground black pepper

1/8 tsp. ground red pepper

2 large garlic cloves, minced

cooking spray

  1. Trim fat from pork; cut pork cross-wise into (8) pieces. Place between (2) sheets of heavy-duty plastic wrap and fatten each to 1/4-inch thickness, using meat mallet or rolling pin.
  2. Preheat broiler
  3. Combine paprika and next (8) ingredients; rub pork with paprika mixture. Place pork on broiler pan coated with cooking spray. Broil 5 minutes on each side or until done.
