Tuna & White Bean Panini

Another one of Daniel’s lunch time favorites.

Yield: 4

2 (7.1 oz. pkgs.) Albacore tuna (water-pack), drained & gently flaked

1 (15 oz. can) cannellini beans (white kidney or great northern)

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/4 cup Smart Balance Omega Plus Light Mayonnaise Dressing

8 slices Oroweat Double Fiber Bread

3 tbsp. Smart Balance Light Buttery Spread

2 medium tomatoes, thinly sliced

1 cup lightly packed fresh basil leaves

4 (1 oz. slices) Havarti, mozzarella or provolone cheese

  1. In a medium bowl, stir together tuna, cannellini beans, red onion & garlic. Stir in mayonnaise. Set aside.
  2. Preheat an electric sandwich press, covered indoor grill, grill pan or skillet. To assemble sandwiches, spread (1) side of each bread slice with butter. Spread plain sides of half bread slices with tuna mixture. Top tuna mixture with tomato slices, basil leaves & cheese. Top with remaining bread slices, buttered sides up.
  3. Place sandwiches (half at a time, if necessary) in sandwich press or indoor grill; cover & cook about 6 minutes or until cheese melts and bread is toasted. (If using grill pan or skillet, place sandwiches on grill pan. Weight sandwiches down and grill about 2 minutes or until bread is toasted. Turn sandwiches over, weight down and grill until remaining side is toasted).
