Turkey Meat Loaf II

Yield: 6 servings

cooking spray

1 cup chopped onion

6 tbsp. plain dry breadcrumbs

2 tbsp. chopped fresh parsley

2 tsp. Worcestershire sauce

1/2 tsp. salt

1/2 tsp. dried oregano

1/4 tsp. freshly ground black pepper

1 lb. ground turkey breast

2 large egg whites, lightly beaten

6 tbsp. ketchup

1/2 tsp. hot pepper sauce (Tabasco)

  1. Preheat oven to 350 degrees.
  2. Heat a small skillet over medium-high heat. Coat pan with cooking spray. Add onion to pan; saute 5 minutes, or until lightly browned. Remove from heat; cool slightly.
  3. Combine onion, breadcrumbs and next (7) ingredients in a large bowl. Stir in 4 tbsp. ketchup. Spoon meat mixture into 8 x 4-inch loaf pan coated with cooking spray. Combine 2 tbsp. ketchup and hot pepper sauce in a small bowl. Brush ketchup mixture over meat loaf. Bake @ 350 degrees for 45-50 minutes or until thermometer registers 165 degrees.
