Turkey Meat Loaf

Yield: 6 servings (8 servings)

2 lbs. (2.5 lbs.) extra-lean ground turkey breast

1 cup ( 1 1/4 cups) quick-cooking whole grain oats

1/2 cup (2/3 cup) ketchup

1/4 cup (1/3 cup) fresh parsley, chopped

1/4 cup (1/3 cup) fresh Parmesan cheese, grated

1 tbsp. (1 tbsp. + 1 tsp.) dried oregano

3 tbsp. (4 tbsp.) Worcestershire sauce

2 tbsp. (2 tbsp. + 1 1/2 tsp.) low-sodium soy sauce

2 tsp. (2 1/2 tsp.) dried basil

1 tsp. (1 1/4 tsp.) garlic powder

1 tsp. (1 1/4 tsp.) cayenne pepper

1/4 cup (1/3 cup) ketchup

  1. Preheat oven to 400 degrees. Coat a 9 x 5-inch loaf pan with cooking spray
  2. Combine first (10) ingredients in a large bowl.
  3. Place mixture in prepared loaf pan. Top with 1/4 cup (1/3 cup) ketchup. Bake at 400 degrees for 1 hour and 15 minutes or until done. Let stand 10 minutes before slicing.
