Creamy Herbed Mashed Potatoes

Yield: 6 servings

4 cups (2 lbs.) Yukon Gold potatoes, peeled & cubed

1/2 cup low-fat milk

1/4 cup light sour cream

3 tbsp. margarine

3 tbsp. fresh chives or green onion, chopped

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

  1. Place potato in a saucepan; cover with water. Bring to boil; cover, reduce heat and simmer 10 minutes or until tender. Drain.
  2. In same saucepan combine milk and remaining ingredients; heat on low temperature. Return potatoes to pan. Mash with potato masher to desired consistency.
