Creamy Mashed Potatoes with Chives

Yield: 10     serving size: 2/3 cup

3 lbs. Yukon gold potatoes, peeled & quartered

2/3 cup fat-free milk

1 tsp. salt

2/3 cup (5 oz.) light cream cheese with chives & onions

2 tbsp. margarine

  1. Place potatoes in a Dutch oven and cover with water; bring to boil. Reduce heat, cover and simmer 10 minutes or until tender. Drain.
  2. Return potatoes to pan; add milk, salt and margarine. Mash potato mixture with potato masher to desired consistency. Add cream cheese and stir just until blended.
