Fruity-Grain Bars

Yield: 2 dozen

1 cup unsweetened applesauce

2 cups Kashi 7 Grain Puffs cereal

1 1/4 cups all-purpose flour

1/4 cup nonfat dry milk

2 tbsp. toasted wheat germ

3/4 cup wheat bran

1 tsp. baking soda

1 tsp. ground cinnamon

1 cup fresh or frozen blueberries

6 tbsp. Splenda Brown Sugar Blend

1/3 cup chopped dried apricots

2 mashed ripe bananas

1 tsp. vanilla extract

2 large egg whites

1/4 cup chopped almonds

  1. Preheat oven to 350 degrees.
  2. Spoon applesauce onto several layers of heavy-duty paper towels and spread to 1/2-inch thickness. Cover applesauce with additional paper towels and let stand 5 minutes.
  3. Place cereal in a food processor; pulse until coarsely ground. Lightly spoon flour into dry measuring cups; level with knife. Combine flour, next (5) ingredients and ground cereal in a large bowl.
  4. Scrape applesauce into bowl with flour mixture using rubber spatula. Add blueberries and next (5) ingredients; mix until just combined. Spread batter into a 13 x 9-inch baking dish coated with cooking spray and sprinkle with almonds. Bake at 350 degrees for 30 minutes or until wooden pick inserted in center comes out clean. Cool completely on wire rack.
