Garlic Smashed Potaotes

Yield: 4 servings

4 cups cubed peeled Yukon Gold potatoes

1/4 cup fat-free, less-sodium chicken broth

1/4 cup reduced-fat sour cream

3 tbsp. Smart Balance Light Buttery Spread (tub margarine)

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

3 garlic cloves, minced

  1. Place potatoes in a saucepan; cover with water. Bring to boil; cook 6 minutes or until tender. Drain. Return potatoes to pan. Add remaining ingredients; mash with potato masher to desired consistency.
