Halibut Stir-Fry

Yield: 4     (serving size: 4 oz. halibut + 8 oz. vegetables)

4 (4 oz.) halibut steaks

to taste salt & pepper

2 tsp. olive oil, divided

1 cup carrots, thinly sliced

1 cup celery, thinly sliced

1 cup broccoli florets

1/2 cup green onions

1/4 tsp. grated fresh ginger

1/4 cup chicken broth

2 tsp. cornstarch

1 tsp. grated lemon or lime peel

  1. Remove skin and bones from halibut; cut into 1-inch cubes. Season halibut with salt and pepper to taste.
  2. Heat 1 tsp. olive oil in a large nonstick skillet over medium heat until hot. Add halibut and cook 2 minutes. Remove halibut from skillet and keep warm.
  3. Add remaining olive oil to skillet and heat over medium heat until hot. Add vegetables and cook until crisp and tender. Return halibut to skillet and add ginger. Combine chicken broth, cornstarch and lemon peel; add to halibut mixture. Cook and stir until thickened and halibut flakes easily with fork.
