Healthy Wacky Cake

Yield: about 18 servings

3 cups spelt flour (or other brown flour)

6 tbsp. unsweetened baking cocoa

2 1/2 tsp. baking soda

1 cup Splenda Granulated Sugar for Cooking & Baking

1 cup granulated sugar

2 tsp. cider vinegar

2 tsp. vanilla extract

2 tbsp. canola oil

2 tbsp. unsweetened applesauce

6 tbsp. plain fat-free yogurt

2 cups water

  1. Preheat oven to 350 degrees.
  2. Combine oil, applesauce and yogurt in a small bowl; set aside.
  3. In a large bowl, sift together: flour, cocoa, baking soda and sugars. Make (3) holes in sifted mixture: in first hole, put 2 tsp. vinegar; in second hole vanilla extract; in third hole oil mixture. Pour 2 cups water over whole thing and mix well.
  4. Pour batter into a 9 x 13 x 2-inch baking pan lightly coated with cooking spray. Bake for 25 to 30 minutes or until fork inserted in center comes out clean.
