Italian-Style Meat Loaf

Daniel loves meatloaf and made a special request for it on his birthday yesterday. It was delicious.

Yield: 8     (serving size: 2 slices)

1 lb. 96% lean ground beef

1 lb. 99% lean ground turkey breast

1 1/3 cups home made pasta sauce with tomatoes & basil, divided

2/3 cup toasted bread crumbs

1/2 cup (2 oz.) grated fresh Parmesan cheese

3/4 cup finely chopped onion

1/2 cup chopped fresh flat-leaf parsley

1 1/4 tsp. garlic powder

3/4 tsp. dried basil

3/4 tsp. dried oregano

1/2 tsp. dried Italian seasoning

1/2 tsp. salt

1/2 tsp. black pepper

2 large egg whites

cooking spray

  1. Preheat oven to 350 degrees.
  2. Combine beef, turkey, 2/3 cup pasta sauce and remaining ingredients, except cooking spray, in a large bowl. Press beef mixture into a 9 x 5-inch loaf pan coated with cooking spray. Brush remaining 2/3 cup pasta sauce over top of meat loaf. Bake at 350 degrees for 1 hour and 10 minutes or until thermometer registers 160 degrees. Let stand 10 minutes. Cut loaf into 16 slices.
