Maple Date-Nut Oatmeal Breakfast Squares

Yield: 24     (serving size: 1 square)

1/4 cup maple syrup

1/4 cup coarsely chopped walnuts

1 cup chopped pitted dates

1/4 cup Splenda Brown Sugar Blend

1/4 cup Splenda Granulated Sugar for Cooking & Baking

1/4 cup egg substitute

3 tbsp. butter, softened

1/2 cup unsweetened applesauce

1/2 cup low-fat vanilla yogurt

1 1/2 tsp. vanilla extract

1 1/2 cups all-purpose flour

3 cups quick-cooking oats

1/2 tsp. baking soda

1 1/2 tsp. ground cinnamon

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients in a large bowl, stirring slowly with wooden spoon until combined.
  3. Coat a 9 x 13-inch baking pan with cooking spray. Pour batter into pan and spread evenly. Bake for 25 minutes or until just golden brown around edges. Cool and cut into squares
