Mixed Berry Cobbler

Yield: 12 servings

Filling

1/4 cup whole-wheat flour

4 cups frozen blackberries, thawed

4 cups frozen raspberries, thawed

60 drops stevia extract

2 tbsp. water

1 tsp. lemon juice

cooking spray

Topping

1/2 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp. baking powder

1/4 tsp. baking soda

30 drops stevia extract

3 tbsp. Smart Balance Light Buttery Spread

3 tbsp. unsweetened applesauce

2/3 cup non-fat milk

1/2 tsp. grated orange rind

  1. Preheat oven to 400 degrees.
  2. To Prepare Filling – lightly spoon 1/4 cup whole wheat flour into dry measuring cup; level with knife. Combine flour with next (5) ingredients. Spread mixture evenly into a 13 x 9-inch baking dish coated with cooking spray. Let stand 10 minutes.
  3. To Prepare Topping Рlightly spoon flour s into dry measuring cups; level with knife. Combine flour with baking powder and baking soda in a bowl. whisk together stevia extract and applesauce; pour over flour mixture. Cut in margarine with pastry blender or (2) knives until mixture resembles coarse meal. Add milk and rind, stirring just until moist.
  4. Drop dough onto fruit mixture to form (12) mounds. Bake at 400 degrees for 35 minutes or until bubbly. Let stand 10 minutes before serving.
