Orzo Primavera

Yield: 6 servings

1 (10 oz. can) fat-free, low-sodium chicken broth

1 cup orzo pasta, uncooked

1/3 cup water

1/2 cup fresh mushrooms, finely chopped

1/2 cup carrots, finely chopped

1/2 cup broccoli, finely chopped

1/2 cup green onions, sliced thin

1/2 cup sweet pepper, any color, chopped

1/3 cup Parmesan cheese, grated

  1. In a medium saucepan, combine chicken broth, orzo pasta and water. Bring to boil, reduce heat to medium-low, cover and cook 7 minutes.
  2. Add vegetables and cook for an additional 5 minutes. Remove from heat and stir in Parmesan cheese.
