Peach & Nectarine Cobbler

Yield: 8 servings

Filling

3 cups diced peeled peaches

3 cups diced peeled nectarines

30 drops stevia extract

1 tbsp. cornstarch

1/2 tsp. ground cinnamon

1/2 tsp. grated lemon rind

2 tbsp. fresh lemon juice

cooking spray

Topping

1/2 cup spelt flour

1/2 cup regular oats

1/4 cup Splenda Brown Sugar Blend

2 tbsp. Smart Balance Light Buttery Spread

2 tbsp. unsweetened applesauce

1 tsp. ground cinnamon

  1. Preheat oven to 350 degrees.
  2. To Prepare Filling – combine first (7) ingredients in a bowl, spoon into an 11 x 7-inch baking dish lightly coated with cooking spray.
  3. To Prepare Topping – lightly spoon flour into dry measuring cup; level with knife. Combine flour and remaining (5) ingredients in a small bowl. Sprinkle topping evenly over peach mixture. Bake at 350 degrees for 40 minutes or until bubbly.
