Orange-Date Pumpkin Bread

Yield: 2 loaves/16 servings each     (serving size: 1 slice)

cooking spray

2 cups all-purpose flour

1 1/3 cups whole wheat flour

2 tsp. baking powder

1 tsp. ground nutmeg

1/4 tsp. ground cinnamon

dash salt

1/2 tsp. baking soda

3/4 cup + 2 tbsp. egg substitute

1 large egg white

1 (15 oz. can) pumpkin

6 tbsp. granulated sugar

6 tbsp. Splenda Granulated Sugar for Cooking & Baking

1/2 cup honey

1/3 cup canola oil

1 tsp. finely shredded orange peel

1/3 cup fresh orange juice

1/2 cup chopped walnuts or pecans

1/2 cup snipped pitted dates

  1. Preheat oven to 35o degrees.
  2. Coat bottoms and 1/2-inch up sides of (2) 8 x 2 x 2-inch loaf pans or (4) mini loaf pans. Lightly spoon flours into dry measuring cups; level with knife. In a large bowl, stir together flours and next (5) ingredients. Set aside
  3. In a medium bowl, stir together pumpkin and next (6) ingredients (pumpkin through orange juice). Using a wooden spoon, stir pumpkin mixture into flour mixture just until combined. Stir in nuts and dates. Divide mixture between prepared pans.
  4. Bake at 350 degrees for 40 to 50 minutes or until toothpick inserted near center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Cool completely on wire racks.

Pumpkin-Orange Spice Loaf

1/2 cup all-purpose flour

Vegan Pumpkin Walnut Bread

1/2 cup oat flour

1 cup whole wheat pastry flour

2 tsp. baking powder

3/4 tsp. baking soda

1 1/2 tsp. ground cinnamon

1/4 tsp. ground ginger

1/2 tsp. ground cloves

1/2 cup granulated sugar

1/2 cup Splenda Granulated Sugar for Cooking & Baking

1 cup canned pumpkin

1/4 cup plain fat-free yogurt

1/4 cup fat-free milk

1 banana, mashed

1 tbsp. olive oil

1 tbsp. grated orange rind

1/4 cup fresh orange juice

2 large egg whites

3 tbsp. finely chopped walnuts

cooking spray

  1. Preheat oven to 350 degrees.
  2. Lightly spoon flours into dry measuring cups; level with knife. Combine flours and next (5) ingredients in a large bowl; make a well in center of mixture.
  3. Combine sugars and next (8) ingredients in a bowl; stir with whisk. Add sugar mixture to flour mixture; stir just until moist. Pour batter into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350 degrees for 1 hour and 10 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes on wire rack; remove from pan. Cool completely on wire rack.
