Spiced Turkey Cutlets

Yield: 4     (serving size: 2 cutlets + 1/4 cup bell pepper mixture)

1 tbsp. olive oil

8 (2 oz.) turkey cutlets

1/2 tsp. salt

1/4 tsp. black pepper

1/2 cup sliced green onions

1 medium red bell pepper, cut into (1/4-inch-thick) slices

1 cup fat-free, less-sodium chicken broth

1/4 cup raisins

1 tbsp. brown sugar

1 tsp. ground allspice

1/2 tsp. ground cinnamon

1/2 tsp. ground cumin

  1. Heat olive oil in a large nonstick skillet over medium-high heat. Sprinkle turkey cutlets with salt and black pepper. Add turkey cutlets to pan and cook 3 1/2 minutes on each side or until done. Remove turkey cutlets form pan and keep warm.
  2. Add onions and bell pepper to pan; saute 2 minutes. Add remaining (6) ingredients. Bring to boil; cook until reduced to 1 cup (about 3 minutes). Serve with turkey.
