Sweet Mustard Fish

awwww….sweet memories. This is one of the first meals I made and boy was it delicious and EASY!! I remember it well.

Yield: 4 servings

1 lb. fish fillets (tilapia, snapper, sole)

1/2 cup salsa, thick & chunky

2 tbsp. honey

2 tbsp. Dijon mustard

  1. Preheat oven to 450 degrees. Spray a foil-lined 9 x 13-inch pan with cooking spray. Arrange fish on pan. Bake uncovered 4-6 minutes per 1/2-inch thickness of fish. Drain any liquid.
  2. Combine salsa, honey and mustard. Spoon or brush over fish. Return to oven for 2 minutes to heat sauce.
