Chipotle Meat Loaf

I LOVE chipotle chile pepper so I like to add extra sauce and an extra pepper to this recipe.  If you like you can substitute oats for dry bread crumbs.

Yield: 6     (serving size: 1 slice)

Meat Loaf

1 (7 oz. can) chipotle chiles in adobo sauce

1/2 cup finely chopped onion

1/2 cup coarsely chopped fresh green onion

1/4 cup regular oats

1/4 cup dry breadcrumbs

1/4 cup tomato sauce

2 tsp. chopped fresh parsley

1 tsp. salt

1/2 tsp. ground cumin

1 tsp. chopped fresh oregano (1/2 tsp. dried)

1 tsp. chopped fresh basil (1/2 tsp. dried)

1/4 tsp. freshly ground black pepper

2 galric cloves, minced

2 large egg whites

2 lbs. 99% fat-free ground turkey breast

cooking spray


1/4 cup tomato sauce

1 tbsp. ketchup

1/2 tsp. hot sauce

  1. Preheat oven to 350 degrees.
  2. To Prepare Meat Loaf – remove (1) chipotle chice and 1 tsp. adobo sauce from can; reserve remaining chiles and sauce for another use. Chop chile. Combine chile, sauce, onion and next (14) ingredients in a large bowl, stirring well. Place turkey mixture in a 9 x 5-inch loaf pan coated with cooking spray. Bake, uncovered, at 350 degrees for 30 minutes.
  3. To Prepare Topping – combine 1/4 cup tomato sauce, ketchup and hot sauce in a small bowl; brush mixture evenly over meat loaf. Cover and bake an additional 30 minutes or until thermometer registers 160 degrees. Let stand 10 minutes before slicing.
