Creamy Red Pepper Hummus

Hummus is a dip or sauce made from mashed chickpeas (aka garbanzo beans). Its definitely a dip for garlic lovers! The signature ingredients are garlic, lemon juice and sometimes tahini (aka sesame seed paste)

I started my AdvoCare cleanse 4 days ago which means no dairy, no sugar and LOTS of veggies, fruit and lean protein. I had a hankering for hummus to dip my veggies in so I made this and am loving it. Hope you enjoy.

Yield: about 4 cups

1/4 cup water

1/2 cup tahini

6 garlic cloves, peeled

6 tbsp. fresh lemon juice

1 1/2 tsp. extra-virgin olive oil

1 tsp. ground cumin

1/2 tsp. salt

1/4 tsp. pepper

2 (15 oz. cans) less-sodium chickpeas (rinsed & drained)

1 large red bell pepper, roasted & chopped (about 1/3 cup)

  1. Place first (3) ingredients in a food processor or blender; process until smooth. Add juice and remaining ingredients; process until smooth, scraping sides of bowl occasionally. Serve with pita wedges or fresh vegetables.
