Chiptole Black Bean Chili

This was absolutely scrumptious. I will definitely be making this again. For more protein add chopped cooked chicken breast.

Yield: 6     (serving size: about 1 cup)

1 tsp. canola oil

cooking spray

1 3/4 cups finely chopped onion (about 1 large)

2 garlic cloves, minced

2 tbsp. chili powder

2 tsp. ground cumin

4 cups canned black beans, rinsed & drained (about 3 [15-oz.] cans)

1 cup water

2 chipotle chili peppers canned in adobo sauce, finely chopped + 2-3 tsp. adobo sauce

1 tbsp. sugar

1 (28 oz. can) diced tomatoes, undrained

  1. Heat oil in a small Dutch oven coated with cooking spray over medium heat. Add onion and garlic; saute 6 minutes or just until onion mixture begins to brown. Add chili powder and cumin; cook 1 minute, stirring constatnly. Add beans and remaining ingredients, stirring to combine. Bring to boil; reduce heat, and simmer 30 minutes or until slightly thick, stirring occasionally.
